The essential aim of the lecture is to teach the laws of energy-, momentum- and mass transport keeping in mind the molecular basis. As transport occurs in case of deviations from thermodynamic equilibrium, first thermodynamic phase equilibria are dealt with by introducing the chemical potential. For the case of heat transfer also selected apparatuses like stationary countercurrent heat exchangers or transient stirred tanks are treated by mathematical models. Particular emphasis is given to the sterilization of biological materials. Apparatuses for mass transfer are dealt with in the lecture "Mechanical and thermic process engineering I".
