After successful attendance of this course the students gained basic knowledge in the chemical composition and analyses of macronutrients as well as their general digestive processes with focus on monogastric organisms. Furthermore, students have the ability to assess the capacities of digestive systems of selected species with respect to the enzymes provided and required for certain food/feed components. In addition, students are aware of the significance of microbial fermentation by microflora of gut and rumen, respectively. Students are well grounded in the utilization (nutrients for production of body tissues, nutrients to provide energy or nutrients intended as active agents), turnover, requirement and regulation of macro- and micronutrients in mammals. Applying the knowledge of energy requirements, turnover and influencing factors, the students are able to independently evaluate foodstuff concerning their ability to fulfill the requirements in a qualitative as well as quantitative manner. Furthermore, students are familiar with further desired (e.g. secondary metabolites) and undesired substances (e.g. biogenic substances, heavy metals) contained in food in addition to the essential and non-essential nutrients.
After successful attendance of this course the students are well prepared for the subsequent compulsory or elective subjects in the field of nutrition sciences (Human Nutrition 976.300, Nutrition Physiology 976.311, Metabolism Physiology 976.310).
