Content

The regional focus of the lecture is, in contrast to its general title, Latin America. This arises from the regional research experiences of the lecturers. Thematically, the historical use of single foods and its distribution, the relevance of the historical context for processing and use of foods in the South will be addressed. The present use and processing of autochthonous foods of Latin America in the North as well as in the South will find its room here as well as their commercial use within the capital oriented market. Positive and negative effects of globalisation will be demonstrated by means of some case studies. The active, participative integration of the students into this lecture (group works, processing trials, presentations, etc.) is thematic element as well as the didactic basis of this lecture.

Objective (expected results of study and acquired competences)

The aim of the lecture is to demonstrate the complexity of nutrition systems in the South and to explain its social and cultural integration within societies. The students shall learn about natural-, cultural- and socio-scientific theories, tools and approaches, which allow analysing nutrition and nutrition systems. The lecture shall arouse the motivation for and the interest in an interdisciplinary perspective of production, processing, distribution, and consumption of foods (mainly from Latin America), and is therefore the main aim of this lecture.
