Selected biohazards and chemical contaminants in food, overview on analytical methodology including quality control, demonstration examples using HPLC-MS/MS and ELISA.

Previous knowledge expected

Basic knowledge in analytical chemistry, in particular of instrumental analytical chemistry.

Objective (expected results of study and acquired competences)

The aim of the course is to discuss the analysis of biological and chemical hazards (contaminants) in food and feed. Outline knowledge of chromatographic and immunoanalytical methods, application of rapid and routine tests for the determination of chemical contaminants in food. Differentiation, illustration and discussion of the achieved results of the carried out experiments.
