- Gabriel Laeis is an associated research fellow with the IDR. He has an interest in food and sustainability ever since he commenced his career as a cook in a small Italian restaurant. He moved on to work for several restaurants, hotels and hospitality management consultancies in Germany, China and Australia. He holds a MSc in Organic Agriculture and Food Systems from Hohenheim University, Germany, and a PhD in Development Studies from Massey University, New Zealand. Gabriel has conducted participatory research in South Africa and Fiji, looking at tourism-agriculture linkages and opportunities for rural development. He holds a Professorship in Hospitality and Culinary Management at IU International University in Cologne, Germany.
