- Overview of agriculture production systems involving livestock and possible risks for food safety (conventional, organic)

- Interactions between feeds, feed additives and the food security of animal derived food (meat, milk, eggs, fish)

- Undesirable substances, contaminants and residues and its physiological principles for carry-over in animal derived food

- Food security and legal aspects (feed regulation)

- Examples for the risk management in animal feeding

Lehrziel

To get an overview of relevant procedures related to animal nutrition and feeding on the food security, with special focus on animal derived food.

To identify main undesirable substances, contaminants and residues in the food chain and to know possible countermeasures

To understand the principles of feed additives on animal health and digestion

To understand the procedures of risk assessment by examples
