Introduction: Epidemiology and molecular epidemiology as applied sciences for ensuring food safety; Overview of ecology and epidemiology of infectious and toxigenic microbes relevant for safety in the food chain; Overview of basic molecular techniques used in molecular epidemiology of food-borne pathogens (e.g. DNA isolation, molecular hybridization, amplification, electrophoretic techniques, sequencing, etc.); PCR-based methods for detection/identification/typing of foodborne pathogens; DNA fingerprinting techniques (e.g. PFGE, PCR-RFLP, RAPD, AFLP, DGGE, plasmid profiling) - theory and applications for tracing food-borne pathogens; Presentation of selected case-studies, on the basis of review articles and own experience; Student-driven presentations of seminar projects, made on the basis of pre-selected review articles.

The participants will have an overview knowledge about sources and transmission routes of food-borne pathogenic microorganisms as well as about the methods, which have been recently introduced in epidemiological studies of food-borne diseases - to understand their spread and threats for public health.
