Lehrinhalt

This lecture course will be held by Prof. Chris Elliott, Founder of the Institute for Global Food Security at Queen´s Universitry Belfast in coop. with Prof. Rudolf Krska from the BOKU-department IFA-Tulln. The course will provide insight into to the global challenges to the Integrity and resilience of the entire global food supply system. Case studies will be presented and discussed with the students. A food system based on the principles of integrity must include food safety, human nutrition, sustainability and understand the importance of ethics and respect. Food fraud can destroy integrity and occurs in our complex food networks and how to detect and prevent cases of food crime will form an important part of this training course. How to achieve a resilient and safe supply chain will be discussed on the basis of novel integrated approaches to prevent fungal and plant toxins in food crops by taking advantage of a set of complementary measures ranging from improved predicition and biocontrol tools to proper storage techniques. The latter is facilitated through the implementation of real time Decision Support Tools by linking physical and chemical sensor data with biological models . With challenges such as COVID, the war in Ukraine and our climate crisis we must become much more resilient to shocks in the global food supply system and examples of national efforts to achieve this will be presented and discussed.

Lehrziel

The student has an understanding of the complexity and challenges of the global food supply system gained. How to feed the world’s growing population with food that is nutritious, safe and sustainable against a backdrop of climate change, pollution, water shortages and supply shocks will be focal points. The student knows the causes of accidental and deliberate contamination of the food system.
