Lehrinhalt

This seminar consists of an introductory lecture, which covers fundamentals of food safety and risk management followed by an interactive seminar. Each student will be assigned to a group that represents a relevant stakeholder for food safety (e.g., consumer, producer, governmental organization, …). Together, students will prepare risk management strategies, which will then be used and discussed during two different food crisis simulations. (COMPULSORY ATTENDANCE!)

Inhaltliche Voraussetzungen (erwartete Kenntnisse)

Fundamental food science, food chemistry, food microbiology and hygiene, quality management, fluent English

Lehrziel

Students can participate in discussions about food safety using correct terminology. They are able to identify key stakeholders during food crisis events. Students can describe the roles, interests and potential challenges of these key stakeholders in terms of food safety and risk management
